			<content:encoded><![CDATA[<p>Usually my hubby cooks dinner for the family. You might think that is awesome, and in a way it IS awesome. But the way it came about was not so awesome. You see, I got really tired of spending hours in the kitchen and then sitting down to a wonderful dinner alone.  I KNOW that my cooking is super-yummy, so my feelings are not hurt with the thought that I&#8217;m a horrible cook. But usually when I cook dinner my hubby declares he is too tired to eat, and my son claims that he can&#8217;t wait that extra ten minutes for dinner and grabs a bowl of cereal instead. So then I end up dining alone and having lots of leftovers. If I had known that I would have been dining alone I would have just made myself a peanut butter and honey sandwich.</p>
<p>So that is what I started to do. Simply make myself a sandwich and be done with it. Not long after that my hubby was complaining that there was nothing for him to eat for supper. Not long after that he started cooking supper himself. If he hadn&#8217;t cooked supper by 8pm I&#8217;d just make myself a sandwich.</p>

Oh, and rippled potato chips, and a cold glass of milk. I don&#8217;t know why I consider that a comfort food; I don&#8217;t think I&#8217;ve ever noticed that in a cook book about comfort food. A couple of months ago my son&#8217;s girlfriend came over to spend the day and they were cooking up some grilled cheese sandwiches with apple slices in the sandwich. I&#8217;d never heard of that before, but I tried one and it was awesome! I&#8217;ll be adding that to my mental assortment of recipes to do again the in the near future!</p>

			<content:encoded><![CDATA[<p>Tonight I decided to warm up the ham that we bought for Easter that didn&#8217;t get used on Easter, and cook up some Potatoes AuGratin (thank you Betty Crocker) and serve up some peas and fresh baked french bread. For dessert I fixed a cake that I only fix once in a rare while &#8211; it is called the easiest cake ever.</p>
<p>To make it you take one box of angel food cake and open it up and dump it into a 13 x 9 pan. Then you open a large can of crushed pineapple, open it, and dump it into the pan. You stir the two ingredients together (it gets foamy which is kinda cool) and then bake it for 25 minutes in a 350 degree oven. It is wonderful hot or cold, and I like to serve it with whipped cream or ice cream and with some strawberry flavored ice cream topping drizzled over the top. </p>
<p>The supper was yummy! There are enough leftovers of the ham and the cake for another meal, I think I&#8217;ve make noodles for that meal.</p>

			<content:encoded><![CDATA[<p>When I have the day off of work, I like to use my crock pot and bread machine to cook supper while I&#8217;m hanging out around the house. The smell of the bread baking is pure heaven!  So today I am cooking a chicken in the crock pot and french bread in the bread machine. I&#8217;m hoping that my hubby will prepare the potatoes and the veggies when it is closer to time to eat.</p>
<p>As I sit here typing this I&#8217;m wondering if I should have just dug out my second crock pot and cooked the potatoes in that. I&#8217;ve never done that before, but I&#8217;m thinking if I washed the potatoes, rubbed them with oil, wrapped them in foil and then just dumped them into the crock pot on low and let them cook the same amount of time as the chicken, that would probably work out just fine! I&#8217;ll have to try to remember to do that next time!</p>

			<content:encoded><![CDATA[<p>Seems as if fire pits are all the rage lately. My sister was telling me that she was looking at some <a href="http://www.firepits.com/">patio fire pits at FirePits.com</a> to get some ideas about decorating her little garden oasis in the back yard. </p>
<p>I think that the fire pits are cute, and when I think of the memories of my own childhood of roasting marshmallows around a camp fire, I think about how cool it would be to have a fire pit to roast marshmallows on again. But then reality hits me and I realize that as awesome as it would look, my &#8220;real&#8221; family would probably never use it; my &#8220;real&#8221; family is a bunch of technogeeks that don&#8217;t like going outside for any reason at all. I love my family, truly I do, but I sometimes wish that we could have some &#8220;old fashioned&#8221; family fun together.</p>

			<content:encoded><![CDATA[<p>Ever since we moved here I&#8217;ve tried to get my husband to try the Perkins Restaurant with me. I&#8217;ve never eaten at one, and I like trying out new places to eat. Unfortunately my husband resists trying anything new. He has trouble adjusting to change. Sometimes I wonder what in the world happened in his childhood that traumatized him so much that he has such a challenge with that!</p>
<p>Anyway, today my mother asked me to go with her to a doctor&#8217;s appointment to take notes about what the doctor said. I did go with her (and it&#8217;s a good thing I did, there were a lot of notes to take!) and on the way home she asked me if I had ever eaten at a Perkins restaurant. I told her that I had not, but have always wanted to try one. So, we ate at Perkins! The food was good, the wait staff was very friendly and helpful, and we brought a freshly baked cherry pie home with us to share with my hubby. I hope to go back there and eat there again in the future. It was a good experience.</p>

			<content:encoded><![CDATA[<p>I have made it very clear to my family over the past several months that I was going to be too busy to host Easter dinner at my house this year. I was really in hopes that someone else in this big extended family would invite us to their house for Easter dinner. But no, no one invited us at all. So a couple of days before Easter I went to the grocery store and bought a small ham, with the intention of having a small two to four people dinner at my place. </p>
<p>Wouldn&#8217;t you know it that the night before Easter several members of my family called me up and asked me what they were supposed to bring to the Easter dinner that they were SURE I was holding! After all, I&#8217;ve held it every year for the past five years, of course I would have it this year too!</p>
<p>Can you say EEK! Well, the house was not decorated for any festivities at all; it wasn&#8217;t even cleaned &#8220;company clean.&#8221; And we made a mad dash to the grocery store and bought a larger ham and we ended up having a family Easter dinner at our house after all! It&#8217;s good to see family get together, whether the house is clean and neat or not. And it was good that no one in the family made any big deal over the cleanliness (or lack thereof) and clutter in the house. And you know what? That&#8217;s a GOOD thing!</p>

I got a coupon from the Sunday newspaper to save 50 cents and the grocery store had them on sale, so I got the bag at essentially half price. I don&#8217;t mind trying something when it&#8217;s free or deeply discounted. If it turns out that I don&#8217;t like them, I bet there will be someone in the house who gives them a try and eats them other than me. And if they are really good, they will disappear very fast.</p>
<p>The cookies are called &#8220;Newton&#8217;s Fruit Thins.&#8221; I noticed they have a honey and fig flavor, a cranberry orange flavor and a blueberry flavor. I decided to try the fig and honey &#8211; after all, that is what makes fig newton&#8217;s famous.</p>
<p>I was expecting a soft cakey cookie, like the fig newtons, but these are more like graham crackers. The bag says that the cookie part is whole grain, only 5 grams of fat per serving (three big cookies equal one serving) and no high fructose corn syrup is used.</p>
<p>I tasted one after I got home and I like it, but it is NOT your mama&#8217;s fig newton.</p>

She knows how much I love cheesecake, so I don&#8217;t know if she sent me the link out of love, or out of sibling rivalry &#8211; hoping that I&#8217;d gain more weight!</p>
<p>Over the past years I&#8217;ve gained about twenty pounds and I have been forced to buy some new clothes to wear. I was hoping to lose the weight before summer came so I would not have to buy a new summer wardrobe, but the weight is a lot harder to lose than it is to find!</p>
<p>So anyway, I was looking at the website and saw a yummy recipe for making some raspberry truffle cheesecake. Loving recipes as I do, I went ahead and clicked on the link and was seeing how easy it would be to make my own from scratch. I found myself wondering if I would be able to substitute the cream cheese with fat free cream cheese, and substitute the sugar with Splenda or Truvia, and perhaps make the cheesecake a little bit healthier. Have you tried doing that yourself? If so, were you happy with the results?</p>

They supposedly improved the quality of the food and raised the prices. Now they have decided that tactic failed and they are turning them back to Food Lions. I don&#8217;t know how I feel about that. I can remember watching a television news show many years ago about problems that Food Lions were having with failed health inspections in regards to their meats. I sure hope that is something that will not be a problem in the future!</p>
